ANNE COY'S HOT SAUCE FOR AVOCADO

Ingredients
- ¼ lb. butter
- 6 Tbsp. kethcup
- 3 Tbsp. white vinegar
- 4 Tbsp. brown sugar
- pinch salt
- 8 ripe, Fresh California Avocados, cut in half and seeded (do not peel)

Instructions
- Place butter, ketchup, vinegar, brown sugar and salt in a medium saucepan or double boiler. Heat until all the butter is melted and the sugar is dissolved. Stir.
- Place avocado halves on a serving dish. Pour sauce over the avocados and serve immediately.
Pineapple Mango Salsa
_Pineapple, nectarine, mango,
cucumber, sweet red & yellow peppers, green bell pepper, serrano
peppers, cilantro, garlic, red onion, lime juice, salt, water. To taste. PS
(warning) Serranos are hotter than jalapenos!
In this particular batch I used
2 cups fresh pineapple chunks
2 nectarines
1 small mango
1/3 of a seedless organic cucumber
1/3 of a green bell pepper
4 mini sweet red peppers
3 mini sweet yellow peppers
1/3 of a red onion
1 garlic clove
1/4 cup cilantro leaves
3 small serrano peppers (too many!!)
1 tsp salt
3 tbsp lime juice
1/4 cup water
All solid ingredients cleaned & chopped into salsa-sized bits.
I like to serve this with Stacy's Simply Naked Pita Chips.
